Ingredients
1 pound cubed chicken breast or wings
3 stalks of lemongrass, finely minced
1 red bell pepper, chopped
1 tsp sugar
2 tbsp fish sauce
2 cloves of garlic
1 tbsp of brownsugar
2 red hot chilis, finely chopped
Salt and pepper to taste
1. In a large bowl, combine the prepared chicken with the minced lemongrass, sugar and 1 tablespoon of fish sauce. Set aside for 1 hour to marinate.
2. In a saucepan, heat 3 tablespoons of oil over medium high flame. Add garlic and stir fry over medium heat until it has a light yellow color. Add the red bell pepper pieces and continue stir frying for about 3 minutes.
3. As the saucepan sizzles, add chicken and lemongrass, stir fry evenly until the chicken is cooked, in about 4 minutes over medium heat.
4. Add the remaining fish sauce, ¼ cup of water, chopped chilis and brown sugar- simmer the mixture for 2 minutes. Add salt and pepper as desired.
